射频解热原理 Radio frequency heating principle
射频加热就是一种电磁场加热的方式,就是通过射频设备将电磁场的能力施加到待加热的物品上,生物细胞和水分在射频电场的作用下,内部分子被激化并随射频电场进行高频振荡,分子间剧烈碰撞摩擦,使被加热物品均匀受热,快速升温,从而实现加热、解冻、杀虫、灭酶、干燥等功能。目前工业用的射频频率为6.78MHz、13.56MHz、27.12MHz、40.68MHz等。
射频解热的特点:
- 物体升温速度快、效率高,电场可以瞬间穿透数十公分厚的物体,使其快速升温;
- 加热均匀,均质物料射频电场内整体升温,内外均匀;
- 均有选择性和平衡性,当物料水分不均匀时,含水率多的部分升温快,蒸发水分多,在干燥物料水分时使得物料水分含量在加热过程中最终趋于一致;
- 在农产品杀虫灭酶时,虫卵及生物酶本身含水分较高,在电磁场作用下快速均匀升温,从而达到杀虫灭活的功效;
- 在冻品解冻时,由于射频的穿透能力强,电磁场可以穿透整箱冻品,使其内外同时升温解冻,整个过程极少失水,保持冻品(尤其肉类)原有的生鲜品色;
- 使用射频设备可以实现自动化控制,利用射频加热的均匀性、即时性的特点,使得解冻、杀虫、灭酶、干燥等工艺可以直接置入工厂的生产线当中,实现自动化流水作业,大大提高生产效率

and the temperature is quickly and uniformly increased under the action of an electromagnetic field, so
that the pesticide and inactivation effects are achieve;
- when frozen products are thawed, because the
penetration capability of the radio frequency is strong, the electromagnetic field can penetrate the whole
box of frozen products, so that the inside and the outside of the frozen products are heated and thawed at
the same time, little water is lost in the whole process, and the original fresh color of the frozen
products (especially meat) is kept;
- The use of radio frequency equipment can achieve automatic control,
the use of radio frequency heating uniformity, real-time characteristics, making the thawing, insecticide,
deactivation, drying and other processes can be directly placed in the factory production line, to achieve
automated flow process, greatly improving production efficiency
